Tasting Notes: With flavors of cassis, plum, dried herbs, and graphite, the wine envelops the palate with dense tannins and bright acidity. It is a mouthwatering and lifted expression of Cabernet Sauvignon that reflects its cool-climate origins. This wine's excellent natural acidity will make it a great food wine and the ideal accompaniment to rich dishes.

"Minus Tide Wines is a love letter to Mendocino County"
"Among Minus Tide’s most thought-provoking wines is its cool-climate study of Cabernet Sauvignon, with fruit sourced from Vine View Ranch in the Yorkville Highlands. Resting at 1,500 feet in elevation, the site produces a remarkably bright expression of the Bordeaux varietal, which is grounded by healthy tannins and notes of plum and garrigue (dried herbs)."
